What you have to remember is that the astringency of the wine should be sufficiently strong to match the chocolate. In order to enjoy the fruit flavors of the wine, the chocolate should not be sweeter than the wine.
So, if you want to be an expert in this combination game, you have to become adept at understanding the flavors and characteristics of chocolates and also be a fine connoisseur of wines. For exquisite chocolates there is nothing to beat fine European chocolates. There are more than 400 varieties of chocolates each with their own distinct aroma and flavor. Similarly, wines are also extremely individualistic in their flavors and ability to enhance the attributes of chocolates. What better way can there be to regale with your loved ones than experimenting with various wine-chocolate combinations?

As a general rule, strong red wines would pair well with dark and bittersweet chocolates whereas lighter red and sweeter white wines would have their flavors enhanced with milk and white chocolates.
